U.S. Beef Consumption Projected to Fall Further in 2012
Changing diets combined with smaller budgets has spurred a 13 percent drop in U.S. per capita beef consumption during the past decade to 57 pounds, and the U.S. Department of Agriculture is predicting further declines in 2012, Reuters said. Dollar sales of ground beef climbed 7 percent in 2011, as consumers traded down from more expensive cuts.
